Ingredients
- 1/2 c. oil
- 2 c. sugar
- 4 eggs
- 3 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 2 1/2 tsp. cinnamon
- 2 1/2 tsp. vanilla
- 3-4 carrots
- walnuts
Directions
- Preheat oven to 325 grease and flour three 8 in. layer pan on a 9×13 pan.
- In a large bowl combine 1/2 c. oil, 2 c. sugar and 4 eggs. Beat well.
- Sift (three times) 3 c. flour, 2 tsp. baking soda, 1 tsp. salt and 2 1/2 tsp. cinnamon
- Add flour mix to bowl a little at a time.
- Beat for 2 min.
- Add 2 1/2 tsp. vanilla, 3-4 carrots blend well and add large chunks of walnuts.
- Divide evenly into small pans for layer cake or into one 9×12.
- Bake at 325 for 45 min
