Ingredients
- 1 Cup Orzo
- 1 3/4 Cups Chicken Broth
- 1/2 Cup Heavy Cream
- 2-3 Chicken Thighs Cut into bite sized pieces
- 1 Cup Spinach
- 1/2 Cup Parmesan
- 2 Cloves of Garlic (1 tsp garlic powder)
- 1 TBSP Lemon Juice
- Salt and Pepper
- 1/2 tsp Italian Seasoning
- 1 TBSP Olive Oil
In an 8 x 8 baking dish add Orzo, Chicken Broth, Cream, Garlic, Lemon Juice, Salt, Pepper, Italian Seasoning. Stir in Chicken and Spinach making sure the Orzo is mostly submerged. Drizzle Olive oil over the Chicken.
Cover with foil and Bake at 400 degrees for 30 mins. Remove foil, stir gently, sprinkle Parmesan on top, and bake for 5-10 more minutes.
