Crockpot Thai Coconut Chicken Soup

Ingredients

  • 1 lb Chicken
  • 4 Cups of Chicken Broth
  • 1 Can of Coconut Milk
  • 2 TBSP Red Curry Paste
  • 1 TBSP Fish Sauce
  • 1 Small Onion Diced
  • 2 Cloves of Garlic
  • 1 Red Bell Pepper Sliced
  • 1 Lime Juiced
  • Fresh Cilantro for Garnish

Instructions:

Add the Chicken, Chicken Broth, Coconut Milk, Red Curry paste, Fish Sauce, Diced Onion, Minced Garlic, and Bell Pepper to the Crockpot.

Cover and Cook on low 6-7 hours or High for 3-4 hours, until the chicken is tender. Once done remove the Chicken, shred and add back to the soup base. Serve with Lime juice and Cilantro.
