Carrot Cake (Nana’s)

Ingredients

  • 1/2 c. oil
  • 2 c. sugar
  • 4 eggs
  • 3 c. flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 1/2 tsp. cinnamon
  • 2 1/2 tsp. vanilla
  • 3-4 carrots
  • walnuts

Directions

  1. Preheat oven to 325 grease and flour three 8 in. layer pan on a 9×13 pan.
  2. In a large bowl combine 1/2 c. oil, 2 c. sugar and 4 eggs. Beat well.
  3. Sift (three times) 3 c. flour, 2 tsp. baking soda, 1 tsp. salt and 2 1/2 tsp. cinnamon
  4. Add flour mix to bowl a little at a time.
  5. Beat for 2 min.
  6. Add 2 1/2 tsp. vanilla, 3-4 carrots blend well and add large chunks of walnuts.
  7. Divide evenly into small pans for layer cake or into one 9×12.
  8. Bake at 325 for 45 min
